About Veronika

I’m a creator and educator with a Level 5 qualification in Health Coaching, and a deep interest in how food, mindset, and everyday habits shape our wellbeing.

Over the past years, I lost 35 kg and significantly improved my health. That personal journey provided me with valuable insights into behaviour change, self-awareness, and sustainable lifestyle choices.

Through Food, Mind and Body, I create courses and resources that encourage reflection, understanding, and gentle habit-building. This space is about learning, not fixing — supporting people to reconnect with their bodies, reduce overwhelm, and make informed choices that fit real life.

My work explores the relationship between nutrition, stress, mindset, and daily routines, offering practical knowledge without pressure, rules, or perfection. Everything here is designed to support wellbeing in a calm, realistic, and human way.

Weight loss story

For years, I was obese — though I didn’t want to admit it. I told myself it wasn’t that bad, and I certainly didn’t want to hear it from anyone else. I used to wear dresses over leggings, trying to hide what I didn’t want to see. I’ve always loved cooking and couldn’t imagine giving up “tasty” food like pizza, burgers, chips, and potatoes. So, I built a little bubble around myself — pretending everything was fine.

But I wasn’t fine.
I was suffering from daily heartburn, constant bloating, and a general sense of discomfort that I kept ignoring. I wasn’t listening to my body.

Then came a turning point. During a two-day training in London, I ate nothing but carbohydrates — sandwiches, snacks, pastries — and by the end of it, I felt completely miserable. On my way home, I still bought an apple pie, ate it even though I wasn’t hungry, and then had pizza for dinner. The next day, I felt awful, both physically and emotionally.

When I stepped on the scales and saw the number over 100 kg for the first time, I knew something had to change. That moment became my wake-up call — the point where I decided I couldn’t go on like this. My life had to change.

I began my low-carbohydrate journey in July 2022. I knew right from the start that I didn’t want to count calories or eat low-fat products, as many people do. The low-carb approach appealed to me because it allowed me to keep enjoying many of my favourite meals — just with a few smart adjustments.

Of course, it also meant giving up sugar completely, along with foods made from white flour and potatoes. Surprisingly, I never felt like giving up. Yes, I occasionally dreamed about chocolate bars during those first few months, and I made a few early mistakes — like having flavoured yoghurts for breakfast — but the results spoke for themselves. I lost 12 kg in the first six months, without counting calories or being overly strict about carb tracking. My rough aim was around 50 net carbs per day, though I never actually calculated it precisely.

When you start eating real food with healthy fats — and you have extra fat to lose — it’s amazing how naturally your body responds.

The photo was taken around the time people began noticing my weight loss and complimenting me. At that stage, my goal was to lose as much as possible within a year and then gradually reintroduce some carbohydrates. As it turned out, I was very wrong about that!

By May 2023, just 10 months after changing my lifestyle, I finally started to feel truly good about myself. It takes time — around nine months — to break old habits completely, and by then, I had fully understood and committed to what living a healthier lifestyle really meant.

I no longer craved the foods I used to rely on, such as potatoes, and I genuinely wanted to continue eating low-carb, nourishing foods for good. By that point, I had lost 20 kg and was comfortably wearing clothes two sizes smaller. Even better, I no longer needed medication for heartburn — and I haven’t experienced it since.

Feeling so well, both physically and mentally, made me realise that I wanted to help others experience the same transformation. That’s when I decided to enrol in the Health Coaches Academy, marking the beginning of an exciting new chapter in my career.

I’ve reached my weight goal — 35 kg lost in just over three years — and dropped three clothing sizes along the way. I’ve reversed my asthma, gained more energy than ever, and truly feel the best I’ve felt in my life. Even after a sleepless night, I wake up feeling strong and ready for the day.

I’m now exercising more than I ever did as an adult — even completing several 5k runs — and I’m proud of how far I’ve come. I no longer keep my old size 16 clothes, even if they still fit loosely, because they don’t reflect who I am anymore.

One of my proudest achievements has been publishing my own cookbook, turning my journey into something that can inspire and help others.

My weight loss journey wasn’t always easy, but it was absolutely worth it. I would never go back to my old habits. This is my lifestyle now — and I plan to maintain it for life, staying active, healthy, and vibrant well into my older years.
